Servings: 7-9 (38 meatballs)
Preparation: 20 minutes
Cook: 20 minutes
Ingredients for Thanksgiving Stuffing Meatballs Recipe:
- – 2 cups of cooked box stuffing
- – 1lb ground pork
- – 1lb ground lean ground beef
- – 1 large egg
- – â…“ cup chopped fresh Italian parsley + extra for garnish
- – 1 small grated onion
- – 5 small garlic cloves grated
- – 1 tsp garlic powder
- – 2 tbsp seasoning salt***
- – 1 tsp black pepper
– 1 tsp sea salt - – Cranberry sauce for dipping- Olive or avocado oil for frying
Directions:
1) In a large bowl, combine all ingredients well. Mix the mixture by opening and closing your hand in the mixture, squeezing it through your fingers, to ensure everything is well incorporated and evenly distributed. Be careful not to overmix or your meatballs will be tough.
2) Shape into balls (about 35g or 1 tbsp + 1 tsp each)
3) Coat a pan with oil on medium heat. Add meatballs to the pan once the oil gets hot. There should be gaps between the meatballs, do not overcrowd your pan. Cook for 5-7 minutes per side.
4) Garnish with fresh parsley and serve hot with cranberry sauce!
***Note: some seasoning salts contain a higher salt content than others. Start with 1 tbsp of seasoning salt and fry a tester meatball. If more salt is needed, make the adjustment for the rest of your mixture. This will help prevent oversalting your meatballs!
